Apple Streusel Muffins

I try to make something special for breakfast on Saturday mornings. These muffins are really easy and they taste like they came from a bakery.

Apple Streusel Muffins

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened 
  • 1 cup white sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla
  • 2 Granny Smith apples, peeled and diced small

Topping:

  • 2/3 cup packed brown sugar
  • 2 tablespoon all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter

Preheat oven to 375. Grease a 12-cup muffin pan.  

In a small bowl, sift together flour, baking powder, soda, and salt. In a large bowl, cream together butter and sugar. Beat in eggs and vanilla until fluffy. Stir in apples. Gradually fold in dry ingredients, until the batter is just combined. Do not overmix. Spoon batter into prepared pan.

In a separate bowl, combine flour, brown sugar and cinnamon. Work butter into sugar mixture until crumbly. Sprinkle the topping over the batter. Bake 20 minutes, or until a toothpick comes out clean.
