My mom’s birthday is today, and so I used this opportunity to practice a few cake-decorating skills. This one is a spice cake with cream cheese icing. Recipe follows…

Light and Fluffy Cream Cheese Icing

  • 1 1/2 cups heavy cream, whipped
  • 1 pkg. cream cheese, softened
  • 1/4 cup butter, softened
  • 1 c. sugar
  • 1 tsp. vanilla extract

Beat cream cheese and butter until smooth and creamy. Add sugar and vanilla, beat until very smooth. Gently fold in whipped cream.

    I have been asked to make a two layer sheet carrot cake for an employee who is leaving. I came across your cream cheese frosting and am curious did you pipe with it in the cake you made for your mom or did you use buttercream to pipe and just frosted with the cream cheese. I’m looking for a frosting I can pipe basic things like a shell border, some stars and writing. I’d appreciate your advice.
