red, white, and black beans and rice

My version of another Louisiana favorite. You could, of course, use any variety of beans you like.

  • 1 lb. smoked sausage
  • 2 cans red beans
  • 2 cans white beans (great northern, navy, cannellini)
  • 1 can black beans
  • 1 onion, diced
  • 1 green pepper, diced
  • 2 cloves garlic, minced
  • 1 c. water or chicken stock
  • 2 bay leaves
  • cajun seasoning to taste

 

Slice sausage into 1/4 inch rounds. Brown on both sides over medium heat in a large deep skillet or pot. Add onions, peppers, garlic, bay leaves, and seasoning and sautee until vegetables are soft. Drain all the beans. Stir in 1 can red beans, 1 can white beans, and 1 can black beans. Puree remaining red and white beans in blender until smooth, then add to the pot. Stir in liquid, and simmer, covered, over low heat for 20 minutes. Serve over rice.

    Sounds delicious – but where is the beautiful picture we are so accustomed to 🙂

    I tried to put in the picture, but it would only show up tiny. I don’t know if it has something to do with the wordpress changes or what, but I am going to try again. 🙂

    Looks delicious, too! That’s funny about the pics because I was never able to do the thumbnails and now after the changes I can!
