a birthday knight

Today is a birthday at our house. My middle son has been waiting for this day for a long time. Ever since he got a book about knights and castles from the library, he has been fascinated with all things medieval. He told me he was planning to be a knight when he grows up. He says he can be a page when he is seven and, if he works hard, a squire by the time he is fifteen. Well, we managed to make a little headway on that dream last night when we went to Medieval Times. We all had a great time, and my little Grant was knighted long before he ever imagined.

When he asked me for a castle cake, I knew I was going to have to jump in to the world of decorating with fondant. This was by far the most time-intensive cake I’ve ever attempted, but it was worth it to see my little knight beaming when he saw it.
