start the week with a cookie

I tried a new cookie over the weekend. They were pretty tasty, so I thought I would share them here this morning. We served them with vanilla ice cream and caramel sauce.

White Chocolate Toffee Cookies

  • 1 cup butter
  • 1 cup light brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups oats
  • 1 1/2 cups white chocolate chips
  • 1 cup toffee bits 

Preheat oven to 350. Lightly grease cookie sheets.

In a medium bowl, cream together butter and sugars until smooth. Stir in the egg and vanilla. In separate bowl, sift together the flour, baking powder, baking soda and salt,  and then stir into the creamed mixture. Mix in the oats, white chocolate chips and toffee bits. Drop by tablespoons onto cookie sheets.

Bake for 12 minutes in the preheated oven.
